<p>Mélangez au fouet la farine de châtaigne avec le lait et la crème</p>

<p>Dans un plat allant au four versez la moitié de la préparation, puis ajoutez la moitié du brocciu <span style="background-color: rgba(0, 0, 0, 0);">ou le brocciu entier pour les plus gourmands et terminez par verser le reste du mélange.</span></p>
<p><b>ÉTAPE 4 :</b></p>
<p>Enfournez 50 minutes à 180 degrés en surveillant régulièrement avec la lame du couteau, elle <span style="background-color: rgba(0, 0, 0, 0);">doit être sèche.</span></p>
<p><b>ÉTAPE 5 :</b></p>
<p>Vérifier la cuisson selon la dimension de votre plat (ici 23x18cm). Si le plat est plus grand 40 <span style="background-color: rgba(0, 0, 0, 0);">minutes ou 30 suffisent.</span></p>

<p>À l’aide d’un ciseau et d’un gant de cuisine ouvrir les oursins et récupérer les langues (partie orange).</p>
<p><b>ÉTAPE 2 :</b></p>
<p>Laver les coques, bien les sécher et réserver. Battre les oeufs dans un bol à l’aide d’une fourchette. Assaisonner de poivre et d’un peu de piment d’espelette.</p>
<p><b>ÉTAPE 3 :</b></p>
<p>Préparer un bain-marie avec une casserole d’eau bouillante et dans un récipient faire fondre à feu doux le beurre.</p>
<p><b>ÉTAPE 4 :</b></p>
<p>Verser les œufs et l’aide d’une spatule en bois, remuer constamment en effectuant des huits. Il faut quelques minutes avant que la préparation commence à prendre. Ne pas cesser de tourner les œufs sans quoi ils risqueraient d’attacher au fond du saladier. Lorsque les oeufs sont suffisamment brouillés, ajouter les langues d’oursins et mélanger.</p>
<p>Puis hors du feu, ajouter la crème fraîche.</p>
<p><b>ÉTAPE 5 :</b></p>
<p>Continuer à mélanger puis rectifier l’assaisonnement. Attention au sel, les langues d’oursins étant iodées).</p>
<p><b>ÉTAPE 6 :</b></p>
<p>Remplir les coques avec les oeufs brouillés, ajouter quelques langues sur le dessus et servir sur des assiettes garnies de gros sel.</p>

<p>Préparez une sauce tomate : pelez l’ail et l’oignon, émincez-les. Faites-les fondre à feu doux dans 1 cuillerée d’huile d’olive. Ajoutez le concentré de tomates puis la pulpe de tomates, le basilic et le fenouil, assaisonnez de sel, poivre et de 1 pincée de sucre. Laissez mijoter 15 min.</p>
<p><b>ÉTAPE 2 :</b></p>
<p>Mettez les langoustes vivantes 15 minutes au congélateur pour les « assommer » et ensuite coupez les en morceaux. Faites chauffer 1 cuillerée d’huile et le beurre dans un faitout. Mettez-y les morceaux de langouste à roussir 6 min en mélangeant. Versez ensuite le rhum et faites flamber.</p>
<p><b>ÉTAPE 3 :</b></p>
<p>Versez la sauce tomate et 4 louches de soupe de poisson dans le faitout et laissez mijoter 15 min à feu doux. Ajouter de l’eau si besoin . Parsemez de persil ciselé. Pendant ce temps, faites cuire les pâtes dans une grande quantité d’eau salée 7 à 10 min puis égouttez-les.</p>
<p><b>ÉTAPE 4 :</b></p>
<p>Versez les linguine dans le faitout, mélangez et laissez sur feu doux 2 à 3 min. Servez aussitôt</p>

<p><b>ÉTAPE 1 : Préparation de la POOLISH (levitu)</b></p>
</p>
<ul>
<li>Prélevez la moitié de la levure, mélangez dans un récipient avec 100g de farine (prélevez) la levure et 100g d’eau de source (tiède), laissez lever 30 minutes.</li>
</ul>
<p><b>ÉTAPE 2 : Réalisation de la pâte (impasta) Dans un récipient</b>,</p>
<ul>
<li>Débarrassez votre farine</li>
<li>Creusez un puit</li>
<li>Au centre, versez votre Poolish</li>
<li>Mélangez votre sucre et votre matière grasse</li>
<li>Rajoutez le restant de la levure</li>
<li>Incorporez le tout</li>
<li>Mélangez le sel avec les œufs, incorporez puis bassinez avec le pastis, jus de citron et eau. Relevez les manches et pétrir jusqu’à décollement de la pâte de votre récipient (15/20 minutes). Incorporez votre anis au grain, faites une boule</li>
<li>Couvrez-la avec un torchon et laissez-la reposer environ 2heures (jusqu’à doubler de volume).</li>
</ul>
<p><b>ÉTAPE 3 : Mise en forme</b></p>
<ul>
<li>Reprenez votre pâton afin de lui donner la forme dessinée. Prélevez environ 50g de pâte par œuf (pour former les croix) Pesez vos caccavelli (500g)</li>
<li>Boulez (laissez poser 1heure)</li>
<li>Formez votre couronne en formant un trou au centre de votre pâton et étirez la pâte vers l’extérieur Débarrassez votre couronne sur une plaque à four (munie d’une feuille de papier sulfurisé) Aplatissez légèrement votre couronne.</li>
</ul>
<p><b>ÉTAPE 4 : Apprêt (pause)</b></p>
<ul>
<li>Préservez votre plaque à l’abri du froid Couvrez d’un torchon humide vos caccavelli</li>
<li>ASTUCE : préservez dans le four éteint et fermé 2h/3h. ÉTAPE 5 : Préparation pour le Chef-d’œuvre (Meravigliosu)</li>
<li>Dans une casserole d’eau légèrement salé, trempez les œufs pendants le temps d’apprêt (pause) ASTUCE : cela évitera qu’ils éclatent lors de la cuisson.</li>
<li>Préparez votre dorure (œufs + sel)</li>
<li>Faites chauffer le four à 180/190°, sortez vos caccavelli</li>
<li>Avec un pinceau, badigeonnez la couronne de dorure</li>
<li>Enfoncez vos œufs légèrement humides « casserole » en les tenants par les extrémités Fermez vos croisillons sur vos œufs en forme de croix</li>
<li>Rebadigeonnez les caccavelli sur les œufs et les croix.</li>
</ul>
<p><b>ÉTAPE 6 : Cuisson (mette in u fornu)</b></p>
<ul>
<li>Enfournez vos caccavelli à four chaud (35/40 minutes), pendant la cuisson réalisez un sirop avec 100g de sucre et 50g d’eau. A la sortie du four, badigeonnez vos caccavelli et ça brille !</li>

<h2><b>1. Dacquoise noisette</b></h2>
<p>Tamiser le sucre glace sur la poudre de noisette puis mélanger le tout. Monter les blancs en neige en y incorporant en 3 fois le sucre semoule. Une fois que les blancs sont fermes, ajouter le mélange sec en mélangeant délicatement avec une maryse.</p>
<p>Sur une plaque de four recouverte de papier cuisson, verser l’appareil en prenant soin de le repartir pour que l’épaisseur soit identique partout. Enfournez dans un four préchauffé à 170° et cuire pendant 12 minutes.</p>
<h2><b>2. Mousse vanille &amp; liqueur de myrte</b></h2>
<p>Tremper la gélatine dans de l’eau froide.</p>
<p>Dans une casserole, faire réduire la liqueur de myrte pour en faire évaporer l’alcool et obtenir une substance sirupeuse. Réserver.</p>
<p>Dans un saladier, mélanger les jaunes avec le sucre puis ajouter le mascarpone. Faire chauffer 50gr de crème et ajouter les feuilles de gélatine avant de verser le tout sur votre mélange oeuf, sucre et mascarpone. Rajouter le sirop de myrte.</p>
<p>Monter en chantilly les 290gr de crème restants avant de l’incorporer au précédent mélange.</p>
<h2><b>3. Sirop myrte</b></h2>
<p>Mettre tous les ingrédients dans une casserole et <span style="color: var(--awb-text-color); font-family: var(--awb-text-font-family); font-size: var(--awb-font-size); font-style: var(--awb-text-font-style); font-weight: var(--awb-text-font-weight); letter-spacing: var(--awb-letter-spacing); text-align: var(--awb-content-alignment); text-transform: var(--awb-text-transform); background-color: var(--awb-bg-color);">porter le tout à ébullition pendant 3 minutes.</span></p>

<p>Couper 3 bandes identiques de dacquoise à la noisette et les imbiber avec le sirop. Il est possible de les recouvrir d’une couche de confiture de myrte ou d’une couche de crème de marrons, à votre convenance.</p>

<p><strong>2.</strong> Placer le beurre dans un saladier et battre à faible vitesse.</p>
<p><strong>3.</strong> Ajouter les sucres et battre jusqu’à ce que le mélange soit lisse.</p>
<p><strong>4.</strong> Ajouter les oeufs et battre jusqu’à incorporation.</p>
<p><strong>5.</strong> Arrêter le mixeur et verser la maïzena, la farine et la levure. Battre jusqu’à incorporation totale.</p>
<p><strong>6.</strong> Verser les pépites de chocolat, les noisettes et remuer afin de bien les répartir dans la pâte.</p>
<p><strong>7.</strong> Diviser la pâte à cookies en 8 parts égales.</p>
<p><strong>8.</strong> Couvrir une plaque allant au four de papier sulfurisé et cuire 4 cookies par plaque pour 16 minutes. Les cookies sont prêts lorsque le dessus et la base sont légèrement dorés. Ils poursuivront leur cuisson sur la plaque en refroidissant encore 15 minutes avant de servir.</p>

<p><strong>1.</strong> Mettre à tremper la crépine dans une eau salée et vinaigrée, puis rincer soigneusement</p>
<p><strong>2.</strong> Rincer les boyaux à l’eau claire, mettre également à tremper, puis rincer.</p>
<p><strong>3.</strong> Découper les abats en morceaux égaux, suffisamment gros pour mettre sur la brochette.</p>
<p><strong>4.</strong> Piquer les abats en alternant les morceaux.</p>
<p><strong>5.</strong> Envelopper la rivia avec la crépine, puis lacer le plus solidement possible avec les boyaux (pas trop fort, sinon les boyaux cassent)</p>
<p><strong>6.</strong> Laisser reposer et égouter dans un endroit frais jusqu’au lendemain.</p>
<p><em><strong>Le jour&#8230;</strong></em></p>
<p><strong>7.</strong> Préparer la <em>salamughja</em>. Les quantités sont à l’appréciation de chaque famille. Le tout étant de respecter l’équilibre des goûts.</p>
<p><strong>8.</strong> Placer la <em>rivia</em> devant le feu, pas trop proche, pour qu’elle cuise lentement (deux à trois heures) en tournant. Arroser régulièrement avec la <em>salamughja</em>. Lorsque la crépine et les boyaux croustillent, la rivia est prête !</p>
